Level design

How will the level design look. Will it all be flat like on the village pictures or have "multiple heights".

All what you should focus on from these village models, are the models.

Not the nearby environment not the sky and definitely not the texturing.
Olivier will start texturing the village when it's 100% modelled, currently it's  at 24%..

To answer your question... There sill be differences in the level of ground withing the village. And it won't be bricks like you saw on mod db but there will be multiple textures as the village will be really big. Rivers,trees and other  stuff will also be added inside and outside of the village.
